Chia Seeds and Champagne is hosting what promises to be the health and fitness holiday St Tropez has to offer in 2016 in early May. Hosted by personal trainer and nutritionist Holly Pannett – one of London’s most renowned and highly qualified – the week combines nutrition, fitness and yoga to transform body and mind.
Here’s all the details of what Chia Seeds and Champagne have on offer:
The fitness
The retreat offers fitness classes that are uniquely tailored to the group’s needs but are varied daily. All sessions include heart rate elevating activities – such as hikes along the picturesque vineyard lanes, pilates-based sessions in the sanctuary of the garden, circuit classes, body weight exercises, abs blasts, a water workout in the quarter-Olympic size resort pool and even a stretch session to ease those developing (aching) limbs.
We combine educated and effective fitness in the most glamorous location to make each session hard but enjoyable. Gentle encouragement is the key, rather than drill-sergeant boot-camp style. Remember it is your decision how many activities you participate in. A tough love workout for those who fancy it, or perhaps the pétanque boulodrome is all that is required.
Nourishing your body with fresh and nutritious food to allow your digestive system to rest and replenish is the main objective.
The nutrition
The retreat offers a varied selection of fresh, healthy food, refreshing juices and mood-boosting smoothies. The menu – developed by Holly – is sourced from high quality, local produce and and includes a digestive rest day of raw foods to complement the bespoke range of supplements included in the Health package. Holly enjoys cooking with raw, alkaline-based, gluten-free ingredients and incorporates her knowledge of traditional Chinese food energetic principles into her cooking.
Nutritionally unburdening your system and mindful eating allows your body time to restore its vitality. By the end of the retreat, you will feel a sense of digestive renewal alongside control. You will embrace what you have learnt, and leave with new knowledge to add to your daily routine.
More than anything, I want to show you how easy and delicious healthy food is – you CAN eat desserts, delicious dips, protein-mood boosting smoothies all made with natural ingredients. This way of eating is absolutely not about deprivation – but instead it is about embracing a positive, healthy way of life and enjoying a glass of skinny champagne!
The yoga
Beyond all else, the key to a successful yoga holiday is an engaging, caring and inspiring teacher who will get you out of bed in the morning. Matt, our teacher, is the man to do this – even if you are aching from the previous day’s activity!
Matt’s classes are dynamic and fun – so expect a strong vinyasa-based practice, with an energetic flow and constant focus on the breath. Matt will make you laugh, forget your inadequate flexibility and have you trying things you never thought you’d do…or even thought you might want to do!
Yoga classes are held every morning and evening on the retreat. Whilst participation is optional, your strength and practice will develop with each session. Morning classes are designed to be energising and challenging and are an excellent way to kick-start the day, whilst evening classes are relaxing and restorative. It is not a problem if you are new to yoga or have never tried it before: Matt is highly experienced in ensuring that everyone – whatever their experience, will be challenged – learn and enjoy.
The retreat
Chia Seeds and Champagne is a luxurious health residency with complete relaxation and escape. This retreat will energise your body, nourish you from the inside out – in essence, restore and revive the feeling of physical and mental strength. We use the combination of fresh nourishing food, a variety of high-end fitness, 2 yoga classes each day and plenty of free relaxation time so that you are offered a dedicated and balanced health and fitness holiday. On this retreat nothing is compulsory and everything is encouraged in moderation.
The continuous pattern of getting up early, over scheduling, family, free time in front of a screen, late nights and travelling takes its toll. This pattern of being ‘busy’ has become the socially accepted norm and we need to stop the glorification of it. The 5 night stay at the Chia Seed and Champagne retreat will allow you the opportunity to take some time away from busy and return fit, rested and nourished.
Villa Tropez’s glamorous environment alone is replenishing, but we’ll pair this with a warm welcome from the Saint Tropez sun (fingers crossed), highly qualified and industry renowned personal trainers, yoga specialist and ample free relaxation time. This retreat will allow you to sweat away your stress, create a fresh and clean state of mind and recharge.
The number of guests is kept deliberately small to ensure that all clients receive personal attention and guidance. A daily programme is encouraged, but mostly this retreat is about listening to your body’s own needs and finding that balance of yin and yang – if that means a glass of sugar free champagne and an early night (yin replenishing) or you are just there for the savasana 😉 then so be it! If we need to relight the fire and energy within (yang) or tone bottoms and tummies, then there are plenty of physical activity options available each day.

Your trainers
Holly is uniquely placed as both an experienced personal trainer and nutritionist. Her knowledge in both these areas, along with her positivity and pleasure in creating healthy and delicious food, blend perfectly for an enjoyable retreat.
Holly is an upbeat Kiwi who has an uncanny ability to know exactly how far she can push you – and then she motivates you to go just that teeny bit further (no slouch herself, she’s competed in dressage, volleyball and is a fearsome hockey adversary). She’ll guide you gently so that you will feel your best, without being preachy. A party girl who likes a good time (including skinny champagne) – Holly will lead you to optimal health, fabulous digestion and a strong physique.
Holly completed her Bachelor of Sport and Recreation in New Zealand and then moved to London ten years ago, where she was accredited with her Post Graduate Diploma in Nutrition for Health Care Practitioners and her Masters in Nutrition. Holly has worked at London’s top Health clubs and has established a successful private client base in west London with both high profile and esteemed clientele.
Holly has contributed her nutrition knowledge to the British media including Vogue, Grazia, Harper’s Bazaar, Forbes, Men’s Health and in 2014, the book ‘Sweet Nothings’, published by Orion. Holly was voted ‘One of London’s top three personal trainers’ by ES, the Evening Standard magazine.
Holly’s winning combination of skills allows her to motivate, educate and nourish guests in a highly personal way. She believes this week is about participating in what feels right and is fun for you. Once you have completed your Chia Seed and Champagne residency, you will feel revived, healthy and fabulous – not beaten up or undernourished.
Matt Julian
Matt’s yoga journey began many years ago as a tennis player when he introduced a few sporadic yoga poses as a way of keeping flexible. An awakening of sorts convinced Matt to box up his Australian life and set off with his backpack, open to all possibilities and adventure.
It was during these travels that he met his not-yet-but-soon-to-be yoga brother and teacher, Ryan Leier. Although he didn’t know it at the time, he would become a big influence on Matt’s journey and teaching. This journey would eventually lead him to London, where he was trained in Vinyasa Flow by the amazing Claire Missingham, who continues to inspire whenever he takes further practice with her. The planets then aligned to enable Matt to re-connect with Ryan. Matt has since travelled to Canada and Iceland several times to study, practice and learn with Ryan.
Matt has a degree in Human Movement, and is a qualified Health Coach through the Institute of Integrative Nutrition. He has been a personal trainer for many years, as well as the Head of Fitness for premier health clubs across London, Sydney and Adelaide.
Since committing to yoga Matt has found his body, mind and life open up in ways that only those who have also committed to yoga could understand! Matt will motivate and support YOU throughout your practice. His uplifting personality and friendly essence will immediately put you at ease, even if you are new to yoga. This is a great opportunity to learn from the best.

Travel insurance is a condition of attendance for all guests and must include cover for all personal injury, medical expenses and loss or damage of belongings whist on the premises and during travel. Whilst all care will be taken, Chia Seeds and Champagne can not be held liable for loss or theft of personal belongings (a safe is available) or be held liable for any accidents or injuries which may occur during your stay. Please select your personal travel insurance carefully as exceptions will not be considered for any reason, including illness or injury, personal or family emergencies, weather etc.
If in the rare event that the retreat is canceled, all deposits / balance of payments will be refunded. Chia Seeds and Champagne is not liable for covering any personal expenses incurred such as airline tickets due to itinerary changes or cancellation of retreats.
To confirm a place on the retreat, a 50% booking deposit, as well as a signed retreat guest form and a Physical Activity Readiness Questionnaire (Par-q) is required. By paying the booking deposit you confirm you agree to all terms and conditions.
Booking deposits are non refundable. Balance of payment is due six weeks prior to retreat start date; if the balance is not received, the place will be re-advertised, and the deposit retained. If the guest cancels their booking more than six weeks prior to retreat start date, the booking deposit (50% of price) will be retained. No refunds or compensations will be made for cancellations made within six weeks of retreat start date, or in the event of arriving late, leaving early, or deciding to not complete the retreat. Bookings are transferrable to another person for the same dates if unable to attend; Chia Seeds & Champagne has discretion over suitability of the person taking the place, as all occupants must be comfortable within the bedroom arrangements booked, and of the same gender if in a shared room with persons they do not know.
All guests are to abide by the noise and behaviour policy of Villa Tropez, with no noise outside after 10pm or near bedrooms, this is to respect the serene retreat setting, other guests, and rural neighbourhood. Please be aware the swimming pool is not heated and the average temperature in Saint Tropez in May is 20 degrees. All participation in the retreats Itinerary is optional. Check-out is by 1pm on the day of departure.
